If you’re heading down DC Office Road in Manipal, you’ll eventually pass Mandovi Square. We are located right there on the ground floor, sharing space with Shivaprasad Shetty’s setup. Manipal is such a strange town because it feels like it’s almost entirely made of students and hospitals, so there’s always this restless energy in the air. Our spot is pretty convenient since it’s on the ground floor, so we don't have to lug heavy crates of food supplies up any stairs. The work at Thaamboolam is mostly about the prep and making sure the food masters have what they need. It’s not a huge space, but we’ve organized it so everything is within reach. Outside, you can hear the bikes zooming past and people chatting on their way to the offices. The weather here in Manipal can go from incredibly hot to a total downpour in about ten minutes, so we’re always keeping an eye on the door. It’s a practical workspace, nothing fancy. We spend a lot of time on our feet, dealing with suppliers and getting the kitchen orders sorted out. Being near the DC office means there’s always some activity nearby, which keeps things interesting. We’ve been here for a bit now, and we’ve gotten used to the rhythm of the street. It’s just a regular day-to-day grind for us, focusing on the food and making sure everything is handled properly before it leaves the square. Every morning starts with a fresh list.
