Ethnic Bawarchis

We are located in Sachidananda Towers, right on the Udupi Manipal Road in Kadiyali. It is a pretty well-known spot because we are quite close to the Nilgiris Store. The kitchen is where most of the action happens, and it stays warm in there all day long. We have been cooking here for a while, focusing on the kinds of food people in Udupi grew up eating. It is a noisy place with the sound of pans clanking and the exhaust fan humming in the background. We don't really go for fancy decorations or anything like that; we just have tables and chairs that are sturdy and easy to clean. Most of the staff are local people who know their way around a kitchen. We get a mix of students from Manipal and families from Kadiyali coming in. Lunchtime is usually the most hectic, with everyone wanting their food at the same time. We try to keep up, but sometimes people have to wait a little bit. We use a lot of local ingredients that we get from the markets nearby. In the afternoons, when it is quieter, we prep for the dinner rush. The smells from the spices usually drift out onto the road. It’s a basic setup but it keeps us busy from morning until late at night. We just focus on getting the food out on the plates and making sure everyone is fed.
