Sector 6 in Hiran Magri is a good place to be. We set up the shop every afternoon and wait for the evening crowd to show up. The smell of the gota frying is usually what brings people over. I spend a lot of time preping the batter and making sure the rabdi is chilled just right. It’s a messy job, especially with the chutneys, but it’s good work. My brother stands by the big iron pot and handles the frying while I take the orders and handle the money. We have a few benches outside but most people just stand around and eat while they talk. It gets really crowded around seven or eight at night. We go through a lot of plates and spoons. When the weather is nice, people stay longer. If it rains, we have to scramble to move things under the awning. We’ve been at this spot for several years now and we know the regulars well. One guy comes every Friday for his rabdi fix. After we close, there is a lot of cleaning to do, scrubbing the counters and washing the floor. It’s a long day and my back usually aches by the time I get home, but seeing people enjoy the food makes it worth it. We just keep it simple and honest. The lights from the other shops help keep our corner bright until we lock up.
