Hot Pepper is based out of a building at 47, Pallipatti. It is a small, quiet place and we do not have a lot of neighbors right on top of us. We deal with peppers and chillies all day long, which is obviously where the name of the business comes from. Most of our working day is spent sorting through the fresh produce that comes in. It is all manual work, and you have to be very careful not to touch your eyes or face after you have been handling the stock. We do not have any big signs or a fancy storefront to show off. It is just a simple building where we get the peppers sorted and ready for sale. The air around the property usually has a bit of a spicy kick to it because of all the dust from the dried chillies. We work with the local farmers in the area for the most part. Sometimes the crops are very good and sometimes they are a bit disappointing, and we just have to deal with whatever nature gives us. We do not have a lot of staff here, just a few people from the village who know how to handle the heat. We keep things very basic in terms of how we run the place. There is no corporate structure or anything like that here. We just buy the peppers, sort them out, and move them along to the buyers.
