Trichikaveri Foods Private Limited is over at No.19, Annamalai Nagar Main Road. This is right in the heart of Annamalai Nagar, near Thillai Nagar in Trichy. Being on the main road means it is always noisy with buses and autos going past. We are used to it by now. We focus on traditional food items. The kind of stuff people in Trichy have been eating for years. Our building is one of those older ones that stays relatively cool even when it is boiling outside. We have a few big stoves and some large grinders. Most of the staff have been with us since we started. We do not really do things the modern way with lots of computers. We still write a lot of stuff down in ledgers. It feels more real that way. The kitchen is always busy from five in the morning. We use a lot of local spices that we get from the market nearby. You can smell the mustard and curry leaves frying from a block away. Sometimes people just wander in because of the smell. We have to tell them we are not a restaurant, just a production place. We pack the food into simple bags and send them out. It is a routine that works for us. We do not need much else. Just the heat of the kitchen and the sound of the road.
