Our shop is right at Katargam Limada Chowk on Bardoli Road, and the smell of sugar and ghee is usually what lets people know they've arrived. We spend most of our mornings over big vats, stirring milk or frying up snacks. It gets really hot in the kitchen area, especially during the festival months when everyone wants something sweet to take home. We don’t have a website or anything like that. People just stop their scooters outside and yell their order or come in to see what we made fresh that day. The display cases aren't perfect, and sometimes the glass gets a bit foggy from the heat. We use the same recipes that have been around for years, mostly because that’s what we know how to do. There are plenty of other shops around, but we’ve stayed here at this corner for quite a while. We go through a lot of flour and sugar every single week. Sometimes the floor gets a little sticky, but we try to keep it clean enough for the customers. It’s a busy spot with all the traffic heading toward Bardoli. You can hear the horns honking all afternoon while we pack boxes. We aren't doing anything revolutionary here. We just make the mithae, sell it, and start over again the next day before the sun gets too high. It's just a regular local sweet shop, and we like the routine of it. We keep things simple and just keep cooking.
