N .H. Masala

If you walk through Gao Market in Karan Nagar, you’ll probably smell us before you see us. N .H. Masala is located at Plot No. F 15, and the scent of ground spices is always hanging in the air around our door. It’s a small operation. We have a couple of grinders going throughout the morning, turning raw ingredients into the powders people use in their kitchens. It gets a bit dusty inside, so we have to clean the counters multiple times a day. We aren't a big factory with conveyor belts and robots. It’s just us handling the bags, checking the seeds, and making sure the blend is right. The market is always loud and full of people, which we’ve grown to like over the years. We keep our spices in large bins and weigh them out as needed. Sometimes the power goes out and we have to wait around for it to come back so we can finish the grinding. We don't do much advertising; most of our customers are just people from the neighborhood who’ve been buying from us since we opened. We try to keep our prices fair because we know everyone is struggling with the cost of things lately. It’s a simple life, surrounded by coriander, turmeric, and chili. We just focus on getting the spice right for the local cooks who depend on us.
