Brijwasi Sweets

We’ve been running the sweet shop right opposite the Town Hall for a long time. Every morning we start early, getting the milk and sugar ready to make the batches for the day. The Town Hall area gets really busy, especially when there are events or meetings going on. You can see people walking by all day, and many of them stop in for a quick snack or to buy a box of sweets to take home. The shop isn't very large, and it can get a bit cramped when the afternoon rush starts. We don't have any fancy marketing or big advertisements. We just put the trays out and people know what we have. There’s always the smell of ghee and spices in the air, which we don't even notice anymore because we are around it so much. We spend most of our time behind the counter or back in the small kitchen area. The floor is usually a bit sticky by the end of the shift, no matter how much we sweep. It’s just the nature of working with sugar and syrup. We have our regulars who come in every week for the same thing. We don't use any complicated systems, just a simple cash drawer and some scales. It’s a local business and we just focus on making the food the way we always have. It is a lot of work, but we like seeing the familiar faces.
