Alsiraj Bakery

If you come down to Panchasheel Colony and look for Plot No 12, you will find us right there on the ground floor. Being a bakery means our day starts way before most people even wake up. Around four or five in the morning, the ovens are already heating up and the place starts smelling like flour and sugar. We aren't a big factory or anything like that. It is just a local spot where we make bread and biscuits for the neighborhood. The ground floor location is handy because people can just walk in off the street when they see the shutters go up. We spend a lot of time cleaning up flour from the floor and making sure the trays are ready for the next batch. Sometimes the oven acts up or a delivery is late, but that is just part of running a small shop like this. We have a few regular customers who come by at the same time every single day for their usual tea snacks. It gets pretty warm near the back where the baking happens, so we usually keep the front door open for a bit of a breeze. We don't have fancy displays or bright lights. We just put the fresh stuff out on the shelves and wait for people to come in. It’s a simple life, but it keeps us busy from dawn until we close up late in the evening.
