Tilak Road is where you will find us. Keshar Dev Ji Dall & Flour Mill is right there in the Burns Plot area of Burdwan. It is a noisy business, to be honest. The machines for grinding the dall and flour make a steady humming sound that you can hear from the street. There is always a fine layer of white flour dust on the floor, no matter how much we sweep. We work with big sacks of grain and pulses. People bring their own containers or we fill up bags for them. It is hard work, lifting those heavy loads all day. My shirt usually ends up covered in flour by noon. We do not have a fancy office. Just a small desk in the corner with a calculator and a bunch of papers. The neighbors do not seem to mind the noise; they have lived around the mill for years. We get the raw materials from the local markets and process them right here. It is a very straightforward process. We do not use any fancy additives. Just the grain and the stones grinding it down. Sometimes the machines break down and we have to spend the whole afternoon with grease on our hands fixing them. That is just part of the job.
