Our place is on J M Road, right by the Eramma Layout and Bannerghatta Main Road area. It’s a busy corner. We have the fryers going from the moment we open until we shut the doors at night. There is always the sound of the timers beeping and the oil bubbling. We wear our uniforms and hats, and we spend a lot of time behind the counter taking orders. The lobby has those red and white chairs that we have to wipe down constantly because they get greasy. We get all kinds of people, from students to families. The air conditioning is usually turned up high because of the heat from the kitchen. We have to keep the bins empty and the floors mopped so no one slips. There is a lot of chicken to bread and fry in batches. We follow the same steps every time. Sometimes the soda machine acts up and we have to fix it while people are waiting. It gets very loud during the dinner rush. We have a lot of paper bags and napkins stacked up in the back. The location on J M Road means there is always traffic outside. We just keep our heads down and get the orders out as fast as we can. It’s a fast-paced job and there is always something to clean or refill.
