Chatakdar is right here in Kothrud, which is a place that never really stays quiet. We’ve been operating out of this spot for a while, dealing with the daily rush of people looking for something to eat. It’s a small setup, mostly just us standing behind the counter and the customers standing on the pavement. We don't have much in the way of seating, so people usually just grab their food and stand nearby or take it with them. The kitchen area is quite tight and it gets really hot during the afternoons. We are always chopping onions or frying up something in the big kadhai. The smell of spices is everywhere, it even sticks to our clothes by the end of the shift. We aren't doing anything revolutionary here. It is just the same recipes we’ve been using since we opened. Some days are better than others, and sometimes the rain makes everything a bit messy, but we keep the stove going regardless. Kothrud has a lot of food places, so we just try to do our part and keep the regulars happy. We don't have a big marketing team or anything like that. It’s just me and a couple of helpers trying to get the orders out on time. If the food tastes like it should, then we’ve done our job. It’s simple and honest work that keeps us on our feet all day.
