Being on S.V Patel Salai means we are right in the middle of the action, not too far from the beach and the main shopping areas. The shop is small and brightly lit. We don't have a lot of bells and whistles. We mainly focus on quick meals that people can take away or eat quickly at the counter. The humidity in Pondicherry can be tough, so we keep the fans going at full speed all day. We see a mix of tourists who are lost and locals who stop by every single day. We don't use any marketing tricks to get people inside. Usually, the smell of the cooking does the work for us. The staff is pretty laid back, as is the style in this town. We take orders, cook them up, and hand them over. It’s a very simple operation. We’ve had the same few people working here since we opened, so we have a good rhythm going. Sometimes we have to deal with the power cuts that happen in this part of town, but we keep things moving as well as we can. It’s just a normal business run by normal people who like to cook.
