P L Confectionery sits at No. 42/1 on Khajpura Road in the Anandpur area. It’s a modest shop that we’ve run for a long time. The front part is where we keep the display counters, and the back is the kitchen where all the baking happens. It’s usually very warm in there because of the ovens. We start work very early in the morning when the streets are still quiet. By the time the sun is up, we have the first batch of sweets ready. The shop doesn't have any air conditioning, just a couple of ceiling fans that spin all day. We have some old wooden stools for customers who want to sit for a minute. The walls are painted a simple cream color, and we have a few pictures of the local temple hanging up. We don't use any fancy machinery; most of what we do is by hand. It takes longer that way, but it’s how we’ve always done it. Sometimes we run out of certain items by noon, and we just have to tell people to come back tomorrow. We use plain brown paper for wrapping up the orders. The Khajpura Road can get quite dusty, so we are always wiping down the counters. It’s a simple, hardworking life. We know our customers by name and often ask about their families. It’s more of a community spot than a big business. We just like making good things for people.
