New Gokul Chaat Corner

It is pretty noisy here on Station Road near the Police Line. We get New Gokul Chaat Corner open early, usually by the time the first few trains are coming through and people start walking up the road. It is just a small place at number 295, nothing fancy to look at really. Most days I am just busy prepping the spices and making sure the tamarind water is right. My hands usually smell like coriander and roasted cumin by noon. The police guys from the line come over sometimes when they are off duty, and we just chat about whatever is happening in the neighborhood. It gets really dusty with all the traffic passing by, but that is just how it is on this side of town. I have been standing behind this counter for a long time now. Some days the sun hits the front of the shop so hard we have to pull the shade down halfway, but people still find their way in. We don't have a big team or anything, just a couple of us making sure the plates go out and the floor stays mostly clean. It is a lot of work keeping up with the evening rush when everyone is heading home from the station. Sometimes I forget to take a break myself. I think people like that we are just here, day in and day out, doing the same thing. It is not a complicated life but it keeps us busy enough.
