Saz Shree Rohini Caterers is based out on Rani Kanpura Road. We spend most of our time in the back where the big burners are. It’s not like a restaurant where you come and sit down. It’s more about the huge pots of dal and the rows of plates ready for a big gathering. The kitchen gets really hot, especially when we’re preparing for a large event. There’s always the sound of knives hitting cutting boards and the smell of hot oil and spices in the air. We don't have a fancy office for meetings. Usually, if someone wants to talk about an event, we just find a spot that’s not too crowded with crates of vegetables. Kanpura Road is where we do all the prep work before loading everything into the vans. It’s a lot of physical labor, carrying heavy containers and making sure nothing spills on the way. We’ve been doing this in Rani for quite some time, so we know how to handle the pressure of a big crowd. We don’t use any marketing slogans or talk about being gourmet. We just cook food that people like to eat at weddings and parties. It’s messy work and we’re usually tired by the end of the day, but it’s what we do. If you pass by our place on Kanpura Road, you’ll probably see us unloading supplies or cleaning up.
