Maha Dev Chaat Corner

Maha Dev Chaat Corner is located right by the Old Bus Stand. If you’ve ever been there, you know how chaotic it can be. We set up our spot to serve folks who are looking for something spicy and quick. We spend hours boiling potatoes and soaking peas before we even open up for the day. The smell of the spices like cumin and black salt is always around us. It’s a fast-paced environment because people don’t have a lot of time when they are catching a bus. We serve things on paper plates, and there’s always a pile of them to be cleared away. My hands are usually stained a bit yellow from the turmeric, and that’s just part of the job. We have a big iron pan where we fry the tikkis, and the sound of the sizzling oil is constant. Sometimes we get a huge crowd all at once and it’s hard to keep track of who ordered what, but we manage somehow. We don’t have a fancy seating area, just a few spots for people to stand and eat. The water we use for the pani puri has to be just right, or people will let us know. It’s a lot of standing on your feet and dealing with the smoke from the stove. We’ve been here at the bus stand for a long time, and we see the same bus drivers every single day. Most people just want their food fast so they can get on their way.
