About Kishan Chaat Corner – Food & Beverages in Pali
We have been running Kishan Chaat Corner over here on Mandia Road for a while now. It is right in Mahatma Ghandi Colony at number 28, so we see a lot of the same faces every single day. The morning starts with us lugging in the crates and getting the stove going. It is not a big place, just enough room for a few people to stand around and eat while they talk. I usually spend most of my afternoon chopping onions and boiling potatoes because that never seems to end. The traffic on Mandia Road can get pretty loud, especially around five o’clock when everyone is finished with work and looking for a snack. We don’t really do anything special, just the usual stuff people around here like. The floor gets a bit messy when it rains because the road outside is not the best, but we try to keep up with it. My nephew helps me out sometimes when it gets too crowded. We have some old chairs out front that have seen better days, but nobody seems to mind much. It is just a regular life, making food and watching the cars go by. I know most of the kids from the colony by their names since they come by after school. We just keep the lights on and keep cooking until the pots are empty. It takes a lot of time to get everything ready, but that is just the job.
