Jai Pan Bhandar is located at Surajpole Gol Nimbda 29 and it is just a tiny shop, really. I spend most of my day sitting on a small raised platform folding leaves and talking to whoever stops by. The area around Gol Nimbda is usually full of people just hanging out in the evenings. I have known most of my customers since they were kids. We sell the usual things you find at a pan shop and it doesn't take much to keep things running. The walls are covered with small shelves for all the different ingredients I use. My fingers are usually stained orange or red from the stuff I mix together, and it's hard to wash off. The shop has been here for a long time and the wooden door is a bit hard to lock sometimes. I don't have a computer or anything to track sales, I just keep the cash in a wooden drawer. It gets dark in the corner where I sit but I know where every jar is without looking. People come here not just for the pan but to hear the local gossip or complain about the heat. It’s a slow-paced job and I like it that way. Sometimes I close up early if there is a wedding in the neighborhood or if I'm just feeling tired.
