Rani Pratap Bazar is where we stay busy. People come for snacks after they finish their shopping. We have been around for quite a while now. It gets really loud and crowded in the evenings. The stove is always on and we handle a lot of plates every single day. Sometimes we run out of certain items early if the crowd is bigger than usual. It is just how a chat bhandar works. We keep our space as clean as we can while moving fast. My brother and I manage most of it ourselves. We learned this from our father who used to stand in a different spot many years ago. Now we are here in the bazar. The spices we use are the same ones we get from the local market nearby. We do not change things much. People seem to like the taste because it stays the same year after year. We do not have fancy chairs or anything like that. People mostly stand and eat or take their food home in plastic bags. It is a very simple setup. Some days the heat from the big frying pan is a bit much but we are used to it by now. The tea shop next door sends over some chai when we get a short break. That usually happens around three in the afternoon before the evening rush starts again. We do not really have a website. If you are walking through the bazar, you will see the sign.
