Khoya Merchant

Down in Khari Baoli at shop number 326, we spend our days working as a Khoya Merchant. This part of the city is known for its spices, but there is also a big trade in dairy products like khoya. Our shop is a practical space where we receive large batches of khoya that are used for making sweets and other dishes. It is a very traditional way of doing business. People just know where we are and what we do. The floor is often a bit damp from the cleaning, and there is always a lot of movement. It’s just how things are done here in the old market. We just focus on getting the work done and keeping the stock moving every single day. It is not glamorous, but it is what we have been doing for years.
