At Red Platter Fresh & Frozen Private Limited, our daily routine happens at House No. 27M in Punjabi Mohalla, which is tucked away in Zamrudpur, near Greater Kailash-1. Because we handle fresh and frozen items, our main concern is always the temperature in the storage area. We spend a lot of time checking the freezers and making sure nothing is sitting out longer than it should be. The streets in Zamrudpur are famously tight, so whenever a truck comes to drop off new stock, it is a whole operation just to get it parked and unloaded without blocking everyone else. We have had plenty of days where the power cuts off and we have to scramble to make sure the backup is running properly. It is not a glamorous job. Most of the time we are wearing heavy jackets even when it is hot outside because we are in and out of the cold rooms so much. We keep our records in simple notebooks and on an old computer that takes a while to boot up. The house we work out of has been modified to fit all the equipment, so the layout is a bit strange, but it works for what we need. We do not spend money on fancy signs or marketing because we are too busy making sure the meat and vegetables stay at the right temperature. It is a lot of heavy lifting and checking labels over and over until the day is finally done.
