Rahul Dairy is right on the main road in Sagarpur at R-Z-70/A. Our day starts really early, way before most people are even awake. The milk trucks arrive when it’s still dark outside. We have to get everything unloaded and ready for the morning rush. People come in for their daily milk, curd, and paneer before they go to work. It’s a noisy time of day. We’ve got the big refrigerators humming in the background all the time. Sometimes the floor gets a bit wet from the ice and the cleaning we do. We try to keep it as clean as a dairy can be. It’s a family-run place. My father started it and now I’m here most of the day. We also keep some eggs and bread because people always ask for them. Sagarpur is a crowded place, so there’s always someone walking by the storefront. We don’t really do any fancy packaging or anything. It’s just fresh dairy products in bags or containers. In the evenings, it gets busy again when people are heading home and need stuff for dinner. We don't have a big staff, just a couple of us handling the counter and the crates. It’s steady work. We usually finish up late after we’ve scrubbed the counters for the next day. The smell of fresh curd is something you just get used to.
