You can find us at Shop No 19 and 20 in the Sarojini Nagar vegetable market. It’s a lively place, especially in the mornings when the fresh milk arrives. We’ve been making paneer here for quite some time. The floor is usually wet from the water we use to keep things cool and clean. It’s a small shop, but we use every inch of it. The smell of fresh dairy is always in the air. We don't have fancy displays or air conditioning. It’s just us behind the counter, cutting blocks of paneer for the people walking through the market. Sarojini Nagar is always crowded, so there is never a dull moment. We see all sorts of people every day. Some are regulars who have been coming to us for years. Others are just passing through the vegetable section. We start our work long before the sun comes up to get the first batches ready. It’s a lot of lifting heavy cans and pressing the curds. My apron is usually damp by midday. We don't do any big promotions. The quality of the paneer is just what it is. We try to keep things simple and honest. If we run out, we run out. We just close up the shutters and head home. It’s a basic life in the market, but it’s what we know and what we do daily. We don't need much more than that.
