Ghadhwal Paneer Bhandar

If you head over to the Khoka Market in Mohammadpur, you will find our shop. Ghadhwal Paneer Bhandar is a small place dedicated to dairy, and specifically to paneer. We get fresh milk every day and turn it into those big, heavy blocks of paneer that people use for their cooking. The floor in here is usually a bit wet because of the water we use to keep the paneer cool and fresh throughout the day. We cut the blocks into slabs based on whatever the customer asks for—half a kilo, a full kilo, or just a small piece for a single meal. We also keep a little bit of curd and fresh cream on the side. It is a very local operation. We know most of the people living in the blocks nearby. They come to us because they know the paneer was made recently and hasn't been sitting in a package for weeks. We don't have a big corporate office or anything like that; we just have our counters and the cooling units. The Khoka Market can be a bit cramped and messy, but it has a good energy to it. We spend our days talking to housewives, cooks from the local dhabas, and kids sent on errands by their parents. Sometimes we run out of stock by the late afternoon if there is a big wedding or a party nearby. We don't do any advertising. Our sign is simple and just tells people what we sell.
