Bankey Behari Dairy & Paneer Bhandar is located in R K Puram, Sector VI, specifically at Vasant Palace Market, shop number 7. We start our day when most of Delhi is still fast asleep. The milk trucks arrive in the dark and we are there to unload the heavy crates. By the time the sun is up, the shop smells like fresh milk and cold water. We spend hours cutting paneer into blocks and weighing out curd for the morning rush. The floor is always a bit wet from the ice and the cleaning we do to keep things fresh. It’s a small shop but we have big fridges that hum loudly against the back wall. People from the nearby flats come in with their steel containers or just to grab a packet of milk before breakfast. We don't have fancy packaging or a big marketing plan. We just have the stuff people need for their kitchens every day. The counter is stainless steel and always cold to the touch. Sometimes there’s a line out the door when the paneer is fresh out of the mold. We know our regulars and what they want before they even ask. It’s a busy few hours in the morning, then it slows down until people start thinking about dinner and come back for more. We’ve been in this market for years and the routine never really changes much.
