Rasipuram is a busy town in Namakkal, and our street is usually full of activity. We spend our days surrounded by the smell of different spices being ground and mixed. It’s a strong scent that stays on your clothes even after you go home. We are a local team, mostly people from the surrounding neighborhoods who have worked with masalas for years. We don’t have a high-tech factory with robots; it’s mostly us using traditional methods to get the blends right. Every day is about checking the quality of the raw spices that come in. If the chillies aren't dry enough or the turmeric isn't the right color, we have to deal with it. It’s a lot of hands-on work. We don't have time for corporate meetings or long presentations. We just get the orders ready and send them out to the shops. Sometimes the machinery breaks down and we have to fix it ourselves. That’s just part of life here.
