Out here in Hunsur, specifically near the CBT Colony Post, we spend our days working with different spices. Mylar Masala Foods is basically a small group of us trying to get local flavors into bags and boxes for the community. It all started in a small way at the Ramadore place. The smell of ground peppers and turmeric is always hanging in the air here, which we’ve gotten used to, though visitors usually sneeze a bit when they first walk in. We don't do anything too complicated or high-tech. We get the raw ingredients from the farmers, clean them up, and then grind them down. It's dusty and loud work most of the time. Sometimes the machines act up or the power goes out for a few hours, but we just wait it out and get back to it when we can. We aren't trying to be some giant corporation with fancy titles. We just know that people in this part of the country care about their food tasting right every single time. Living and working in the Hunsur Taluk means things move at a certain steady pace. We follow that rhythm. We don't have a big marketing department or anyone doing public relations. Most of our neighbors already know what we do. We just focus on getting the spice ratios right so the masala tastes like it should. It’s simple, honest work. We spend a lot of time checking the quality of the seeds before they go in.
