We are tucked away in the Fort area. It’s one of those parts of town where every building looks like it has a story. Siddhi Cooking Classes has been running out of this space for quite some time now. The stairs are a bit steep and the elevator is temperamental, so most people just walk up. It’s good exercise I guess. Inside, we have the stoves lined up and the counters are usually covered in flour or chopped vegetables by noon. It’s a busy environment. We don’t have fancy equipment, just the kind of stuff you’d use in your own kitchen at home. That’s the point. The windows look out onto the street and you can hear the taxis honking all day long. It’s just the background noise of Fort. We usually have the radio playing low in the background too. There’s a tea stall right outside the main entrance where we go during breaks. The light in here is actually quite good in the mornings. We spend a lot of time washing dishes. It feels like we are always cleaning something. But that’s how it goes when you’re teaching people to cook. It’s a hands-on kind of place. Nothing is too formal. We just want people to feel comfortable while they are here. The address is simple, just Fort, but people find their way eventually. There is a specific smell to this neighborhood, like old paper and salt from the sea nearby.
