We are located right on St Michael School Road in Kandivali East, specifically at A/42. The name Panchforon comes from the five spices we use in our cooking, which my mother always insisted on using back at home. Being near a school means we get a lot of parents and teachers coming in at very specific times of the day. It gets quite loud when the school bell rings and the kids are all over the street outside. We’ve had this shop for a few years now. It’s not very big, so things get a bit cramped inside during the heavy lunch hour. The floor is made of old tiles that are hard to keep shining, but we scrub them every single night before we go home. My brother handles the fryers and I take care of the counter and the customers. We get our supplies from the local market nearby every morning. Sometimes the onions are too expensive, so we have to adjust things a bit, but we never change the way we actually cook the food. The exhaust fan in the kitchen makes a lot of noise, so we have to shout a bit to hear each other over the humming. It’s a lot of standing on your feet all day long. We don't have a fancy website or any of that stuff. If you want to eat, you just come to the window and ask what’s fresh today. It’s a simple way to make a living and we’re quite happy with it.
