You can find us at Forjett Street 19. It is a bit of an old building and we have taken one of the rooms to teach people how to work with chocolate. It isn't a professional culinary school with stainless steel everything. It is more like a large home kitchen where things get a bit messy. Chocolate is a difficult thing to work with if you don't know the tricks. We spend a lot of time explaining how to melt it without burning it and how to get it to shine. There are always spills on the floor and the smell of cocoa stays in your clothes long after you leave. We have a few basic molds and some bowls, and that is about it. Most of the people who come to see us are just neighbors or folks from the city who want a hobby. We don't have a fancy reception desk. You just walk in and find a spot at the table. Sometimes the fans don't work as well as they should and the chocolate takes forever to set, so we just sit and talk while we wait. It is a very slow-paced kind of place. We don't follow a strict corporate schedule. If a class runs late because someone is having trouble, we just stay until it is finished. That is how we have always done things here on Forjett Street. It is practical and a bit unorganized at times.
