Himalayan Savour Llp is based out of Beach Haven No 1, in a flat on Juhu Tara Road. It’s an interesting spot because you can hear the ocean if the traffic on the road dies down, which it rarely does. Santacruz is always moving. We use the kitchen and the main room of the flat to handle all our food business. It’s definitely a home-grown kind of setup. We don't have a storefront or a big sign outside. Most of the work involves preparing ingredients and then getting them ready for delivery. The space is a bit tight, especially when we have three or four people working at once. We’re constantly moving boxes from one side of the room to the other to make space. Juhu Tara Road is a nightmare for parking, so when the delivery riders come, they usually just leave their bikes running outside for a second. We’ve had to get used to working in a residential building, keeping the noise down so we don't bother the people in the next wing. The kitchen can get pretty humid when we’re boiling things, and the salt air from the beach doesn't help with the metal shelves, which we have to scrub often. It is just us doing our thing in a small corner of Mumbai. We don't have a big team, just a few people who know how to get the cooking done right and keep the place tidy.
