Our dairy is out in Village Gharyala, which is part of Tehsil Patti in the Amritsar area. It is a quiet place, far away from the noise of the city. Chanan Singh started this whole thing, and we still run it from the same spot. Our day starts long before the sun comes up because the cows do not wait for anyone. We spend our mornings milking and checking on the animals in the sheds. It is muddy work, especially when it rains, and our boots are usually covered in dirt by breakfast time. We do not have a fancy office; we mostly just meet in the yard or near the cooling tanks. The air smells like fresh hay and manure, which is just how a farm should be. We handle the milk ourselves and make sure it gets onto the trucks as fast as possible. There is no complicated technology here, just a lot of manual labor and long hours. We do not have a website or a social media page. Most people around here just know us by name. When a cow gets sick, the whole day changes, and we have to drop everything to take care of her. It is a simple life that follows the seasons and the needs of the herd. We just do our work and keep the dairy running like it always has been.
