Shree Mawa Bhandar

My family has been at this spot in Gumanpura Road for a long time now. Every morning starts very early here at the Mawa Mandi because that is when the fresh milk comes in from the villages. It is loud and busy before the sun even gets high. We spend most of our day standing over the large iron vats, stirring the milk until it thickens up into proper mawa. It gets really hot in here, especially during the summer months, but that is just how the work goes. People come by from all over the city when they are making sweets for weddings or festivals. We don't really do anything fancy. It is just about keeping the heat right and not letting the milk burn. Sometimes the mandi gets so crowded with trucks and bikes that it is hard to walk through, but we are used to the noise by now. We know most of the people who walk past our door every day. If you look for us, we are right in the thick of the market area. We don't have a big staff, just a few of us making sure the mawa is made the same way it was years ago. It is hard work on the arms and back, but seeing the mawa turn out right makes it worth the effort. We just keep our heads down and do what needs doing every single day.
