Man Bhawani Mawa Bhandar

We spend most of our time here at Gumanpura Road working with milk. It gets hot in the back when we are boiling things down to make the mawa fresh. People usually show up early because they want to get their supplies before the sun gets too high or before they start their own cooking for the day. It's a simple setup we have. We don't really do much besides focus on the quality of what comes out of the pans. Some days are busier than others, especially when there’s a festival coming up and everyone needs extra for their sweets. You can hear the traffic outside all day long while we work. We’ve been in this spot for a while now and most of the regulars just come in, take what they need, and have a quick chat about the weather or how things are going in the neighborhood. It’s not fancy or anything, just a lot of stirring and making sure the heat is right. Sometimes the floor gets a bit messy during the rush but that’s just how it is when you’re busy with fresh dairy. We try to keep things moving so no one has to wait too long out in the heat. It’s just us doing what we know how to do here on the road. Nothing more to it than that. We just keep our heads down and get the work done every day.
