If you are on Gumanpura Road near Sindhi Colony Main Road 5, you will probably smell our place before you see it. At Mahesh Mawa Wala, we deal with fresh dairy and mawa every single day. The work starts very early, way before the sun is up, because that’s when the milk comes in. We spend hours over the large vats, stirring and making sure the quality is right. It is hot work and your clothes always end up smelling like boiled milk. The shop floor is usually a bit damp from the cleaning we do constantly. We have regular customers who have been coming to us for years for their festival supplies or just for their daily needs. We don't use fancy machines for everything; a lot of it is done by hand, the way we learned a long time ago. The counter is usually busy in the mornings and evenings. We don't have much time for sitting down. There are always containers to be filled and orders to be packed into bags. The main road outside is noisy, but in here, we just focus on the task at hand. It’s a simple life, built around the rhythm of the milk deliveries and the seasons. We keep a big metal bell on the counter that people ring if we are in the back room cleaning the pots. We don't have a computer for the bills, just a pen and a paper pad.
