I started this small catering thing at 1 B, Nandalal Bose Lane because I always liked being around food and cooking for people. It isn't a massive operation, just a few of us in a kitchen area making sure the rice is fluffy and the salt is right every single time. Nandalal Bose Lane is a quiet spot, and we like it that way. We don't have a big sign or anything flashy outside to get attention. Most people find us because they ate our food at a friend’s house and liked it enough to ask. We spend a lot of time prepping vegetables and figuring out how much oil we need for the week. It is a lot of cleaning too, which people don't always see behind the scenes. We use a lot of local ingredients from the market nearby because it is easier that way. My aunt helps with some of the recipes because she knows the old way of doing things. We don't try to be something we aren't. We are just local people making meals for other local people. Sometimes we run out of something and have to run to the store last minute, but that’s just life in a kitchen. We focus on getting the food delivered on time, even when the rain makes the lanes muddy and hard to walk through. It’s just us here, day in and day out, making sure the stoves stay lit.
