We are over at 153/1A, Sarat Ghosh Garden Rd in Dhakuria. Dishwell has been operating from this location for a while, tucked away in this part of the neighborhood. It is a quiet enough street most days, though things pick up during the weekends. Our building is nothing special to look at, just a regular place where we set up our equipment and storage. We spend a lot of time cleaning and chopping things before the actual cooking even starts. It is a bit of a routine by now. The Dhakuria area has a lot of families, so we end up doing a lot of local functions. Sometimes the rain makes the road a bit messy, which can be a pain when we are trying to move heavy pots around. We keep a simple schedule and mostly focus on the work right in front of us. There is no big management team here, just a few of us who know how to handle the kitchen. We buy our supplies from the local market nearby to keep things fresh. It is hard work and your back usually hurts by the end of the shift, but it is what we do. We do not use any fancy software to manage things, just a pen and some paper. Most of our day is spent making sure the orders are ready on time.
