We have been running Dine Caterer from this small spot at 26/1, Balaram Ghosh Street for quite some time now. Shyambazar is always busy, so there is usually something going on around the shop. It is not a huge fancy setup, just a kitchen where we spend most of our hours getting things ready for whatever event is next on the list. Usually, the mornings are the busiest when the fresh vegetables arrive and we have to sort everything out. Sometimes the traffic on the street makes it hard to load the vans, but we manage. Most people around here know where we are because we have stayed in this same building. We do not have a big office or anything, just a desk near the back where we take down orders in a notebook. It gets hot in the kitchen during the summers, especially when the big stoves are going. Our staff lives mostly nearby, so they walk in every day. We try to keep things organized, though it gets a bit chaotic when three different parties need food at the same time. The neighbors are used to the smell of spices coming from our windows by now. We just focus on getting the cooking done and making sure the containers are packed right before they go out. It is a lot of work and sometimes we stay up late finishing the prep.
