Bawarchi Biriyani Hut

We set up Bawarchi Biriyani Hut over on Chandighar Main Road, right near the Madhyamgram Bazar. If you know the bazar, you know how busy it gets. We wanted to be in a place where people are always passing by. Biriyani is what we know, so that’s what we stick to. It’s not a fancy restaurant with waiters in suits; it’s a hut where you get your food and enjoy it. The smell of the spices usually lets people know we’re open for business. We spend a lot of time getting the rice and meat just right, which is harder than it looks. Madhyamgram is a good place to be, full of people who appreciate a decent meal after a long day of shopping or working. We aren't trying to change the world, just trying to serve a good plate of food. Sometimes we run out earlier than expected, and other days we have plenty left over. That’s just the nature of the business. We keep the place as clean as we can, but it’s a working kitchen, so there’s always something going on. It’s a bit noisy with the traffic from the main road, but we’ve gotten used to it. We don't have a marketing team or anything like that. It’s just us, the big handis, and the customers who keep coming back. It’s a simple life, and we’re happy with it.
