Everything happens right here at M.I.G 36 in Barra 6. It’s not a big factory or anything like that, just a workspace where the stove is usually going and the counters are covered in wrappers. The smell of cocoa is pretty much stuck in the curtains and the walls by now. We spend a lot of time hovering over the fridge, checking if things have set properly. Sometimes the kitchen gets really hot, especially in the afternoons when the sun hits the back window. We have a lot of plastic containers stacked up in the corner because we always seem to be running out of space for the finished batches. It’s a bit of a juggle trying to keep the house stuff separate from the chocolate stuff. Neighbors often pop their heads in because they can smell what’s cooking from the street. We use a lot of simple tools, nothing too high-tech, just spoons and bowls and a lot of patience. My hands are usually a bit sticky by the time the sun goes down. Barra 6 is a busy enough place, and we’re just another house on the block doing our thing. The delivery guys sometimes get confused about the house number, so we usually have to go out to the gate to wave them down. It’s a bit chaotic at times, but the chocolates get made and packed up into boxes on the dining table anyway. We just keep going until the last order is boxed up.
