Our place is right inside the IIT Campus in Kanpur, at unit 435. It’s a bit of a different vibe being on a university campus compared to a regular street. We see a lot of students every single day, especially when classes let out and everyone is hungry at once. The kitchen gets really loud with the timers going off and people calling out orders. We have a routine for everything, from mopping the floors to making sure the napkins are stocked. Kanpur can get incredibly dusty and hot, so we spend a lot of time cleaning the glass and making sure the air is cool inside. It’s a busy spot, and sometimes the line goes out the door during the lunch rush. We have a lot of young staff who are working while they study, so there is always a lot of energy around. The delivery trucks come early in the morning to drop off supplies, and we have to get everything moved in before the first customers arrive. It’s not a quiet job, and your feet definitely ache by the end of a shift. We don't really do anything complicated, just make the food the way it’s supposed to be made and try to keep the tables clear. It’s a good spot to see what’s going on with the campus life while we work through the daily grind of serving burgers and fries to tired students and faculty.
