The day usually starts very early, around six or so, because we have to get the tea and coffee ready before the first batch of students arrives. It’s a busy place and it stays that way until we close up in the evening. Most of the time, the air is thick with the smell of fried snacks and steaming sambar. We have a few workers who handle the cooking and the cleaning. It’s not a fancy restaurant or anything like that. The tables are simple wooden ones and the chairs have seen better days. During the lunch hour, the noise is almost constant with everyone talking at once and plates clattering around. We mostly serve traditional things that students like, like dosa, parotta, and sometimes egg puffs when we have the time to bake them. Prices are kept low because students don't have much money to spend. Sometimes the supply of milk is late or we run out of gas, and we just have to manage with what we have. It’s a lot of hard work standing on your feet all day, but it feels good to see the canteen full. Most people know us by name and we know what they usually order without them even saying it. We just keep things moving.
