We work out of Flat 5 in Madhuvan Apartment, right on the Patel Colony Main Road. It’s a bit different running things from an apartment building, but it works for us. Most of our day is spent dealing with food items and making sure everything is packed correctly. The kitchen area is always busy, and there’s usually a lot of activity near the main road because of the location. We’ve been here in this colony for quite some time now. Sometimes the stairs get a bit much when we're carrying supplies up to the flat, but you get used to it. The main road is always noisy with cars and people going about their business. We don't have a big storefront with glass windows. It's more of a practical space where we handle the cooking and the orders. Our neighbors in Madhuvan are used to us by now. We try to keep things quiet, but food work involves a lot of moving around. Sometimes the smells from whatever we're preparing drift out into the hallway. It’s just how it is. We spend a lot of time on the phone or checking the stock we have in the back rooms. It’s a small team here, so everyone does a bit of everything. We aren't trying to be anything fancy. We just focus on getting the food out and making sure the quality is what it should be for the folks who buy from us. It gets hot in the kitchen during the summer, but we keep the windows open for the breeze.
