You can find Masala Baba Llp on the first floor of G 109 in the RIICO Industrial Area of Sitapura. Being in an industrial area means it’s all business around here. There are trucks moving in and out all day, and it can get pretty dusty. We’ve got our unit set up on the first floor, which makes loading a bit of a workout, but we manage. We handle all kinds of masalas. The smell is the first thing people notice when they walk up the stairs. It’s strong and hits you right in the face. We spend our hours blending and testing different mixes. It’s not a science, really, more of a feel for how things should be. Sitapura is a hot place in the summer, and being on the first floor doesn't help much, but we have enough fans to keep us going. We aren't interested in all that corporate talk. We just show up, do the grinding, do the packing, and go home. We have a small team, and we all know what needs to be done. It’s a lot of routine, but it’s honest work. Sometimes we sit around during lunch and talk about how the crop was this year. It’s just us and the spices, really. That is the way we have always run things and it works for us.
