Laduram Nanagram Mawa Wale

Over in Sanganer, you’ll find us. The shop is called Laduram Nanagram Mawa Wale. It’s a busy area and the air always feels a bit heavy. We work with mawa all day long, so there is a lot of heat coming from the back. The space isn't very modern or anything like that. We have old wooden counters and the floor is made of stone that’s worn down in the middle from all the walking. Sanganer is a place where people know each other, so we spend a lot of time just nodding to neighbors passing by. We start work when it’s still dark outside because the milk arrives early. You have to be ready for it or the whole day gets messed up. It’s a lot of stirring and watching the pots. Sometimes the steam gets so thick you can’t see the front door for a second. We don’t really have a fancy way of doing things, we just do it like it’s always been done here. The sign outside is old and the letters are starting to peel a little. We keep thinking about fixing it but then we get busy with the work and forget. It’s just us here, doing the same thing every day. Most of our day is just spent making sure the mawa is right. It’s hard work on the arms and the back but we just keep going until the work is finished.
