We spend a lot of time weighing out different seeds and powders and putting them into bags. The basement stays relatively cool even when Jaipur is roasting outside, which is good for the spices. It’s a bit cramped with all the sacks piled up, but we know where everything is. We handle the paperwork on a small desk tucked between the shelves. The address 302001 is right in the heart of the city, so getting things delivered is usually okay despite the narrow streets around Bharat Mata Path. It’s a small operation with just a few of us.
