Started the dairy out here in Village Dhulate because it’s close to the source. Being near Index Medical College on Nemawar Road makes it easy for people to find us, though the road gets quite dusty in the afternoons. Every morning we start very early, before the sun is even up, because that is when the fresh milk comes in. It’s a lot of lifting heavy cans and making sure everything stays cold. We have been at this location for a while now and most of the locals know where to get their paneer or curd for the day. There is no big office or anything, just the processing area and the storage. Sometimes the cows from the nearby fields wander a bit close to the gate, which is just how it is in the village. We spend most of our time checking the quality and talking to the drivers who take the products out. It is a simple life and the work is hard on your back, but someone has to do it. The smells of fresh milk and cream are always in the air around here. When the trucks leave, the place gets a bit quiet for a few hours until the evening shift starts up again. We just focus on getting the day's work done and making sure the containers are clean. It’s not fancy work, but it keeps us busy from dawn till dusk.
