If you walk down Minister Road, you will find us at Shop No 1. The building is an older one, H No 1 8 32 43 A 1, but it has a lot of character and keeps us right in the middle of everything. Things here at Taur Punjabi get pretty hectic, especially during the lunch rush when everyone is looking for something to eat. We are just a small team trying to keep up with the orders and making sure the kitchen stays organized. It gets quite loud with the traffic outside and the pots clanking in the back, but we have gotten used to it over the months. Most of our time is spent prepping ingredients or cleaning up after a long shift. We don’t have a big marketing department or anything like that, just a few of us who know how to cook and handle the counter. Sometimes we run out of things earlier than expected because it is hard to guess how many people will show up. We just try to do our bit every day and keep the place running as best as we can. It’s a lot of manual work and standing on our feet, but seeing the same faces come back makes it feel worth the effort. Dealing with suppliers and keeping the fridge stocked is a constant job that never seems to end.
