Lasya Samosa is located at MIG 855 in the 1st and 2nd Phase of Kukatpally. We are right here in the heart of Hyderabad. Making samosas is what we do every single day. The kitchen starts early, usually before the sun is even up properly. You can smell the frying oil and the spices from the end of the street. It’s not a big factory. It’s more of a community kitchen setup. We have a few people who help with the folding and the filling. It’s hard work on your hands after a few hours. We sell to local stalls and sometimes directly to people walking by. Kukatpally is always crowded, so there is always someone looking for a snack. The space is small and can get very hot near the stoves. We don't have any air conditioning in the prep area. We just open the windows and keep going. Sometimes we experiment with different fillings, but people usually just want the classic potato ones. We don’t spend money on marketing. The taste usually brings people back. It’s a simple business. We focus on the dough and the fry. If those are right, the samosas are good. We like being in this part of town. It feels alive. Every batch is a bit different because we do it all by hand. We’ve been doing this for a while and the routine stays the same. We just keep frying until the buckets are empty.
